“Spelt” flour is an ancient non-genetically modified grain. It’s a little more nutty & grainy than our other kinds of pasta & with a stunning flavour that is even delicious without sauce, it’s also easy on your digestion.
– Spelt: a very popular grain now in modern healthy bread & we are the only restaurant in Australia using it to make fresh pasta with this combination of ingredients. Yum & definitely different!
–Bush tomatoes: these are tiny dried tomatoes that grow wild in the bush, about the size of a small fingernail & have an intense flavour. We crush these & native Australian mint to the mix.
-Native mint: a rare mint that is not easily available. You can’t taste this ingredient directly but adds to the overall flavour.
