Very creamy pumpkin feta croquettes. These are soft and fluffy on the inside and have a thin crunchy shell on the outside. One of our most popular heat and eat entertainers, we make our croquettes from potato and add fresh pumpkin that we cook and mix with farm-fresh local feta.

8 Finger sized croquettes. 2 per person works well for an entre or entertaining. We use locally sourced Jap Pumpkin and Sam (my father in law) combines it with fresh local feta. On their own, both ingredients can be rather intense in flavour. When you have a master crafts man creating our recipes, you get an amazing balanced super smooth flavour with creamy texture inside and gentle bite on the outside with flavour that blends to perfection! Kids love our croquettes, just don’t tell them it’s pumpkin and life becomes easy.

One of the farmers who supply our pumpkins told me this. When a farmer first came up with a new breed of pumpkin, a marketing expert asked him “What would you like to call your new breed of pumpkin?” To this the rather laid back Aussie farmer responded “Dunno, to me its Just Another Pumpkin.” Taking the farmers advice, the marketing guru then created the acronym “JAP” Pumpkin, from Just Another Pumpkin.
